I love tofu! Crispy tofu over veggies is a favorite of mine. Often times the cooked tofu doesn’t even get to touch the veggies because the second it is even almost done, I’m already snacking and smacking my lips. A little over one pound of tofu (20 oz.) is supposed to serve 5 people. I don’t know how. One and a quarter pounds of tofu in my house serves 2.5 . . . maybe 3 if I am trying to behave myself.

Two weeks ago, I almost bought my mother a Roku for her birthday. Based upon the its description and the infrequency with which she watches TV, I decided against it. Imagine my surprise a couple of days later when she asked her “Tech Advisor” (sigh…me) if I had ever heard of a Roku. Years ago, when I was first introduced to kettlebells by a personal trainer, I was really excited about them. I thought they were the coolest way to workout and I was convinced they would help me get in shape. I wasn’t wrong. It just took me another five years to actually do it. In my kettlebell excitement, I bought a kettlebell and a book, From Russia with Tough Love, on kettlebells for women. At the time, some of the exercises were too hard and I didn’t have the right equipment. I put the book on my bookshelf and forgot all about it.

Do you have zucchini in your garden? In your kitchen? Can you keep with the yield? I don’t have any zucchini yet, but when one of the women I hike with, Kristin, gave me a two foot long zucchini, I was able to make four different dishes with it. I’m pretty sure it lasted over a week in my fridge. I can’t imagine having to eat more than one zucchini a week!
